Crisp Asian Salad with Tofu

Ingredients

  • 3 ½ cups shredded Napa cabbage
  • 2 cups shredded red cabbage
  • 2 cups Teriyaki flavored tofu cubed
  • 1 carrot julienned
  • 1 stalk celery sliced thinly on the diagonal
  • ¼ cup chopped cilantro or flat leaf parsley
  • 2 tablespoon chopped salted peanuts

Instructions

  • In a large bowl, toss together the red and Napa cabbage, carrot, celery, and cilantro or parsley.
  • Toss with a few tablespoons of dressing.
  • Top with tofu and sprinkle with chopped peanuts.
  • Serve with extra dressing to drizzle over salad.
