Ingredients

olive oil
2
medium sweet red onions
approximately 3 cups diced onion, sliced thinly
1
oregano sprig
optional
1/4
cup
sugar
either white sugar or coconut sugar will work

Sherry
red wine or balsamic vinegar

teaspoon
salt
Instructions
In a heavy bottomed pot, over medium heat, warm the olive oil until hot but not smoking.
Add the onions and cook, stirring occasionally, for about 8-10 minutes.
Toss in the oregano sprig and reduce heat slightly to medium/low.
Stir in the sugar, salt and vinegar, and simmer until the sugar melts and the syrup thickens slightly, about 5 minutes.
Remove the herbs (don’t worry about the bits that may have fallen off the stems while cooking – leave them in).
Spoon into a glass jar and allow to cool.
Refrigerate unused jam in closed containers.
